Banana bread recipe

Ingredients

1 1/2 cups all-purpose flour
1 1/2 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
1/4 tsp ground cinnamon
1 egg
4 bananas (overripe, peeled, & mashed)
3/4 cup brown sugar
1/4 cup melted unsalted butter
1/4 cup vegetable oil
zest of one orange or lemon
1/2 cup (optional) chopped walnuts or pecans
(optional) room temperature salted butter

Instructions

  1. Preheat oven to 350°
  2. Grease the bottom and sides of an 8x4-inch loaf pan or an 8" round pie tin, and set aside. In a medium mixing bowl, combine the flour, baking powder, baking soda, cinnamon, and salt. Make a well in the center of the dry mixture, and set aside.
  3. In another bowl, combine the egg, bananas, brown sugar, melted unsalted butter, vegetable oil, and zest. Add wet mixture all at once to dry mixture. Stir just till moistened (batter should be lumpy). Optionally fold in nuts.
  4. Spoon batter into the prepared pan. Bake in a 325° convection oven for 55 minutes, or till a wooden toothpick inserted near the center comes out clean. Cool in pan on wire rack for 10 minutes. Remove loaf from pan, cool on rack.

Recommend serving warm with salted butter.
